Driven by a commitment to quality and seasonality, he developed a strong foundation in the art of cooking through years of hands-on experience in celebrated restaurants on The East End.
To master the art of pastry, Rémy took his passion to Paris, where he trained rigorously and worked at the celebrated Pâtisserie Des Gâteaux et du Pain, embracing a philosophy that celebrates food as an expression of nature’s beauty. He further refined his expertise at the prestigious three-star restaurant Le Pré Catelan, adopting a culinary approach rooted in simplicity, precision, and refined execution.
